Blueberry Oatmeal Crumb Bars

blueberry-oatmeal-crumb-bars-2016-08-06-086For those of us who are trying to bake lighter but still delicious pastries, these blueberry oatmeal crumb bars are a welcome answer. And for those of us who look for IBS safe recipes, (and it is not easy to find recipes that are safe), I provide substitutions for those following fodmap and IBS guidelines. While my food blog is not focused on IBS issues, I myself have to focus on those issues, but up to now I never mentioned this to my viewers (if I actually even have any viewers – lol). Most of my recipes so far have focused on lightening up vintage ethnic and American recipes from the 40’s 50’s, 60’s and beyond.

Since I am not a medical person, I do not feel qualified to have a strictly IBS food blog, but I do feel qualified to mention helps and guidelines parenthetically in my recipe directions, so I will try to do so from now on.

It will take me awhile to make those suggestions in old posts, so that is why I am starting this plan in my new posts and hope to add guidelines into old posts over time.

Now, back to those gorgeous blueberry oatmeal crumb bars. For most of you, buying health bars, breakfast bars, protein bars, etc. is something you can do anytime. IBS folks cannot. The list of ingredients almost always contains some hideous food that would send us off to the ER or into the loo for a week. (Sorry folks for TMI.) If this describes you, watch for the parenthetical suggestions.

However, these bars are perfectly normal and delicious in every way, so bake up a batch and thrill the folks at work, your neighbor with the new baby, or members of your church group – all will praise you to the skies.

Ingredients:

1  cup white sugar

2 cups all purpose flour

1 cup quick oats

1 tsp baking powder

1/2 cup cannola oil

1/2 cup Greek yogurt (for IBSers, use 1/2 cup of the following: goat yogurt or lactose-free, or applesauce)

1 egg ( or can substitute two egg whites)

1/4 tsp salt

1 pinch cinnamon

1/2 tsp grated nutmeg (optional)

2 cups fresh or frozen blueberries

1/2 cup white sugar

1 and 1/2 tsp cornstarch

Directions:

blueberry-oatmeal-crumb-bars-2016-08-06-017In a medium bowl whisk together 1 cup sugar, 2 cups flour, 1 cup oatmeal, 1 tsp baking powder. Whisk in the salt, cinnamon and nutmeg, if using.

Serve while warm, or freeze in small plastic bags and warm up in microwave for 20 seconds or so when ready to serve them.They also taste delicious at room temperature, and can even serve as a dessert with a scoop of ice cream on top. (IBS and fodmap folk can use soy, rice, or almond milk ice cream.)
